Each course contains a minimum of THREE recipes - these are not recipes you need to memorise or follow to the gram. They are a map. They give context, constraints and a place to start. Our recipes are designed in a way that never make you feel lost or overwhelmed. You start, and finish, confidently.
The Compass
A recipe is nothing unless it unpacks the method that makes it work, practically. This is the real way to learn. Heat, timing, texture, balance and truly understanding the architecture of what you cook - this is the compass. It's the underlying methodology that is at the heart of good cooking, regardless of the ingredients or the equipment you have to cook with.
The Exploration
Once you’re comfortable with the method, confidence follows. Slow-cooked lamb becomes slow-cooked beef or pork - because you understand the relationship between time, temperature, and the transformation of collagen into gelatin. You know your sponges will rise, your mayonnaise will emulsify, and your Sauce Hollandaise won't split. You’re no longer guessing. You know that if the method works here, once you have mastered the method, it will work there.
